Coming from vineyards high up on Atlas Peak, it’s 100% varietal aged in new French oak for 12 months. Deeply colored, it offers notes of blackberry, blueberry compote, cedar, dried herbs, and rocky minerality. Soft enough to drink now but with enough tannin to cellar for 10 years.
The mineral, graphite and black thorny-vine fruits are all on full display in this mountain sourced wine. The tiny clusters that proliferated in 2023 at high elevations in the Napa Valley provide strength and structure in this deeply colored Bordeaux blend. The long, cool vintage was ideal for power and backbone. A more judicious use of new French Oak helps the dark fruit to pour from the glass and extend on the palate.
Union Sacre is best known for Alsace-inspired whites, so a Paso Robles Cabernet is a bit of a plot twist, and a welcome one. The winery was founded by two longtime friends who arrived on the Central Coast from opposite ends of the earth: Xavier Arnaudin, a French-trained oenologist and former boxer, and Philip Muzzy, a self-taught designer from Michigan. That French sensibility shows up here as restraint. Fermented in concrete tanks, this is a Cabernet built for drinking now rather than for a decade of waiting, with deep dark fruit, a spice-and-tobacco edge and tannins that stay smooth. Paso Cabernet with balance on its mind.
