After harvest, the grapes ferment in open-top containers with twice-daily punchdowns, followed by 14 months of barrel aging. On the nose, it offers fresh raspberries and hints of leather, while the palate delivers cassis, fig, and silky tannins. Pair it with garlic-braised artichokes drizzled in salsa macha or Char Siu pork.
